5. A SPEEDY SALMON SALAD

Salad Stuff.
a handy box of chopped romaine & radicchio – always chopped and ready to go (essay 20).
Maldon sea salt flakes – our favorite
• red wine vinegar
• EVO
• pepper
• lemon
• red onion
• A salmon concoction (motley salmon – essay 10) 

Chop an onion and keep slices thin.

Add a couple of handfuls of romaine & radicchio.

Toss and sprinkle vinegar.
IMPORTANT ANNOUNCEMENT ABOUT VINEGAR AND SALAD. Get the vinegar on your greens BEFORE the oil. This allows the vinegar to do its work without being repelled by the oil. Your salads will be “brighter”. I never mix vinegar into my dressings.

Lemon juice.

Salt & pepper.

EVO.

Toss and split into the salad bowls.

Several nice dollops of my motley salmon stuff (essay 10).

Top off with a little more lemon.

A tasty and nutritious dinner at the speed of light.
