14. A DINNER SURPRISE

• Six beautiful eggs from our girls
• I think these are  broccoli microsprouts https://doorganics.grubmarket.com
• Some of those cannellini beans
• Local cherries
• EVO
• Arugula pesto
• Parmigiano reggiano https://www.costco.com
• Pepper and salt
First thing is to build bird nests with the greens.

Second. Fill the nest with beans (tiny eggs) and drizzle EVO.

Then comes a dollop of pesto.

Then comes the big eggs. Note: These are 12 minute eggs. The yolk should be moist and silky.

Drizzle EVO over everything.

Add cherries, cheese, salt and pepper.

A really nice wine, served in a couple of Mason Jars and dinner is ready. Extraordinary to be sure! So simple, so elegant and so outrageously tasty. Ouch!!
